Serves 4
This winter squash recipe came from my mother. It is an easy and delicious side dish using butternut or acorn squash, which my mother used most often, but can be made with other varieties of squash that are available during the winter months.
Preheat oven to 400° F. Place the squash cut side up in one layer in a baking dish. Cover tightly with foil. Bake until slightly tender, about 20 minutes depending on the size. Place 1 tablespoon butter and 2 teaspoons brown sugar in the cavity of each squash. Sprinkle with salt and pepper. Bake, uncovered, until very tender, about 20 minutes.
Note: If desired, you can cut down on the amount of butter and sugar without sacrificing flavor.
