Recipes for Leftover Green Beans and Ham

Most of the time I enjoy leftovers of my green beans cooked with ham, which is in the similar and related recipes, reheated just the way they are. However, the ideas listed below work very well when you want something different the second time around or need to stretch the leftovers to serve more people.

  • Green Beans and Dumplings - Reheat the beans and ham, adding a little water if needed, and top with Bacon Dumplings. It is so delicious you might want to make the dish from scratch.

  • Green Bean Soup - Sauté a few onions, celery and carrots. Add some garlic, then diced tomatoes. For a thicker soup, stir in some more diced potatoes, small-shaped pasta, rice or other grain and cook until tender. Add the leftovers and cook just until heated.
