Recipes for Leftover Sauerbraten

Chances are that, when you make a traditional German sauerbraten meal with spaetzle and braised cabbage, you will have leftovers. They can be reheated, but why not try something different. The combination of beef roast, cabbage and spaetzle makes a delicious soup that is especially useful when you need to stretch the leftovers to feed the family.   • Soup - Chop or pull apart the leftover meat into small pieces. Place in a pot with the sauce, cabbage and spaetzle. Add broth or water as needed and cook just until heated. It makes a delicious beef vegetable soup.

  • Sandwiches - Make beef sandwiches with the sliced meat, Swiss cheese and whole grain mustard on rye bread or crusty rolls. If you have cabbage and spaetzle leftover, mix them together and serve warm as a side dish of sweet and sour slaw.
