Homemade Biscuits

Makes about 2 dozen biscuits

Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 1 teaspoon salt
  • 1-2 tablespoons granulated sugar, depending on desired sweetness
  • 2-1/2 sticks (1/2 pound plus 4 tablespoons) cold butter
  • 2 eggs plus enough milk to make 2 cups liquid

Preheat oven to 450° F. Stir together dry ingredients. Cut in butter until crumbly. Make a well in the center. Add the egg and milk mixture. Stir until dough pulls away from side of bowl. Turn onto floured surface. Knead 10 to 12 times. Roll or pat to 1/2-inch thick and use a biscuit cutter or glass to cut them. Bake on a lightly greased cookie sheet for 8 to 12 minutes, or until tops are golden. To keep the tops soft, smear with butter while hot.
