Magic Peaches and Cream Pie

Makes one 9-inch pie

Ida writes: "This is another recipe I would like to share. My boss brought this to a team meeting and it was delicious and easy to make. Hope you enjoy this dessert."

Ingredients

  • 1 package (8 ounces) cream cheese
  • 1 can sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla
  • 1 graham cracker or chocolate crumb crust (see notes below)
  • 1/2 teaspoon cinnamon
  • 1 can of peaches, drained

Allow cream cheese to reach room temperature; beat until fluffy. Add milk until blended and then add lemon juice and vanilla. The cinnamon can be sprinkled on the bottom of the crust or blended through the mixture. Pour 1/3 of mixture into crust, arrange peaches on top and then cover with the remaining mixture. Refrigerate until serving..

Notes: Ida prefers to use a chocolate crumb crust. If desired, the pie can be decorated with fresh fruit or drizzled with melted chocolate on top. If using chocolate, melt chocolate chips and add a small amount of milk before drizzling to prevent chocolate from hardening completely.
