Mashed Potatoes

Serves 4 to 6

Ingredients

  • 7 to 8 Yukon rose potatoes, cleaned well (can use Yukon gold)
  • Rosemary, 1 stem (optional)
  • 3/4 cup half & half
  • 1/2 cup butter, preferably unsalted, cut into pieces
  • 1/2 cup sour cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Clean potatoes very well and cut into a small dice, leaving skins on. Bring large pot of water to boil with salt and rosemary. Add potatoes and boil until easily pierced with a fork. Drain and return to warm pot. Add half & half, butter, sour cream and parmesan. Roughly mash potatoes until just broken down, leaving some small lumps. Taste now before adding salt and pepper, as Parmesan is salty.
