Zucchini Bread

Makes one 9x5-inch loaf

Chris writes: "My father asked me to pass along two of his favorite recipes. In this recipe, you can add more or less cinnamon, raisins, walnuts, and/or sugar to suit your taste."

Ingredients

  • 3 cups all-purpose flour
  • 2 cups shredded, unpeeled zucchini
  • 1-1/2 cups granulated sugar
  • 1 cup chopped nuts
  • 1 teaspoon cinnamon
  • 1 cup raisins
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 large eggs
  • 1 cup oil

Preheat oven to 350° F. In a large bowl, stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins. In another bowl, beat eggs and oil. Pour over flour mixture and stir until moistened. Turn into a greased 9x5x3-inch loaf pan. Bake for 1-1/2 hours or until pick inserted in center comes out clean. Cool in pan 10 minutes; invert on rack, turn topside up and cool completely.
