Chicken Salad Spread

Makes about 1-1/2 cups spread

This was my mother's recipe from a long time ago. It is very easy and delicious. Serve the spread with crackers, crostini, pita triangles or vegetable crudites. However, I love it as my mother originally intended it, as a filling for party or tea sandwiches, as in the recipe in the similar and related recipes.

Ingredients

  • 3/4 cup cooked chicken, skin and bones removed
  • 1/4 cup celery
  • 1/4 cup walnuts
  • 1/2 carrot, peeled
  • 1/4 large green bell pepper
  • 1/4 cup mayonnaise
  • 1/2 teaspoon fresh lemon juice
  • Salt and pepper to taste

Mince the first 5 ingredients in a processor or, as my mother did it, by passing through a meat grinder. Add mayonnaise, lemon juice, salt, pepper and blend well. Serve immediately or cover and refrigerate until needed.

Notes: If using as a sandwich filling, the recipe makes six whole sandwiches before cutting each into four party-sized triangles.
