Ham Salad Spread

Makes about 2 cups

This quick and easy recipe for entertaining can be used as a spread for all sorts of crackers and toasts, as well as to stuff celery boats or cherry tomatoes. However, my mother usually made it as a filling for sandwiches, particularly her party or tea sandwiches recipe, which is in the similar and related recipes. It is a delicious way to use leftover ham, but you can also use deli ham or canned chopped ham. Mom never owned a processor, so she used her food grinder to mince the ham. If you do not have either, the ham can be very finely chopped with a knife.

Ingredients

  • 3/4 pound (12 ounces) leftover cooked ham
  • 1/2 cup minced sweet pickle
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice

Mince ham in processor or food grinder, then mix well with the remaining ingredients. Refrigerate until needed.

Notes: If using as a sandwich filling, this recipe will yield five or six whole sandwiches, each of which can be cut into four party-sized triangles.
