Mexican-Style Cheese Dip

Makes about 1-1/2 cups

I am always on the lookout for interesting dips. I literally threw this one together as a starter to a Mexican meal in order to use some taco sauce I found in the refrigerator. We all loved it. If you like a little heat and spice, add some chopped hot chiles.

Ingredients

  • 1/2 cup store-bought or homemade taco sauce (see the similar and related recipes)
  • 1 cup shredded sharp cheese
  • 4 tablespoons sour cream (can use reduced fat)
  • Fresh green chiles of choice, mild or hot, seeded and chopped (optional)

Place all ingredients in a medium bowl and stir to combine. Heat in microwave on high at 1 minute increments, stirring each time, just until cheese is melted. Serve warm with tortilla chips.

Notes: Microwave wattage differs. After the first minute, you might want to use 30 second intervals. Leftovers can be refrigerated for several days and reheated in the microwave.
