Spicy Marinated Sirloin Steak

Serves 4

The marinade for this steak recipe has a southwestern flare. It is very good. If you like really hot foods, just add your favorite source of heat, such as ground cayenne or chipotle peppers.

Ingredients

  • 1-1/2 pounds top sirloin steak, at least 1-inch thick
  • 1 tablespoon Dijon mustard
  • 1/4 cup red wine
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red wine vinegar
  • 3 large cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried rosemary leaves
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Place steak in shallow baking dish. Mix the remaining ingredients in a small bowl until well-combined. Pour over the steak and turn it several times to cover all surfaces. Cover and refrigerate about 2 hours. Cook on a hot grill, grill pan or under the broiler until desired doneness, about 5 minutes per side for medium-rare. Remove from heat, tent with foil, and let steak rest 5 minutes. Cut the steak across the grain into desired pieces and serve immediately.
