Apple-Cinnamon Cake

Serves 10 to 12

This is another recipe that came from my mother. Most often, she made baked goods from scratch, but she was not opposed to taking some help on occasion from store-bought cake mixes and other products for a quick and easy dessert, especially when she was working. This is a delicious example of what can be made with those ingredients. Whether to use spice or yellow cake mix depends on the flavor profile you want. Serve this cake for brunch, dessert or a potluck event.

Ingredients

  • 1 box spice or yellow cake mix (18.25 ounces)
  • 1 can (21 ounces) apple pie filling
  • 3 large eggs, room temperature
  • 3 teaspoons sugar
  • 1 teaspoon cinnamon

Preheat oven to 350° F. Blend cake mix, apple filling and eggs in large bowl. Beat with mixer on medium speed for 2 minutes.

Combine sugar and cinnamon. Spread half of batter into a 13x9x2-inch baking pan. Sprinkle with half of the sugar-cinnamon mixture. Spread rest of batter on top and sprinkle with remaining sugar mixture. Bake for 30 to 35 minutes or until a cake tester inserted in center of cake comes out clean.
