I love having a few desserts in my repertoire that use convenience foods that I sometimes have in my pantry. This simple recipe for grasshopper cake, using store-bought pound cake and Creme de Menthe, is a quick, easy and delicious take on the pie and drink by the same name. I prefer to make my own whipped cream but you can certainly use your favorite canned or frozen variety.
Keep the cake in its pan. Using a skewer or long, pointy knife, stab the cake multiple times, going all the way through to the bottom. Sprinkle the liqueurs all over. Let set several hours to soak. (If you do not have several hours, 15 minutes will be fine.) Before serving, slice the cake into serving pieces. Top each with whipped cream and garnish with chocolate shavings. Refrigerate any leftover cake.
Notes: To make chocolate shavings, take a chunk or bar of chocolate and, using a vegetable peeler, shave off thin strips. They should curl as you peel, and they do not need to be uniform sizes. As a matter of fact, it looks much better if they are not perfect.
