Homemade Frozen Vanilla Yogurt
(Regular, Low Fat and/or Sugar-Free)

Makes about 1 quart

I love frozen yogurt and decided it was time to make my own. It is so easy and delicious. You can make this to fit any taste or dietary need, which is why I listed variations below the basic recipe. I usually make the low fat, reduced sugar or sugar-free version. It is delicious but, as with most light frozen yogurt or ice cream, not as creamy in texture as the full fat variety. The choice is yours. As with all recipes, use pure vanilla extract for the best flavor.

Ingredients

  • One container (2 pounds) plain yogurt, about 3-2/3 cups
  • 3/4 cup granulated sugar, less to taste
  • 1 tablespoon vanilla

In a large bowl, whisk all of the ingredients until the sugar is dissolved. Pour into an ice cream maker and freeze according to the manufacturer's instructions. When frozen, place in a freezer container, pressing to remove air, seal and freeze for at least 6 hours. Place in refrigerator for about 30 minutes before serving.

Variations: You can vary the recipe by using full fat, low fat or nonfat yogurt. You can replace all or half of the granulated sugar with a sugar substitute with a 1:1 ratio. Since I do not like anything very sweet, I usually reduce the amount of sugar by 1 tablespoon, whether regular or sugar substitute, using 1/2 cup plus 3 tablespoons. You can start with less, taste and add more before freezing.
