Recipes for Leftover Corned Beef
(with or without cabbage)
Whether you make corned beef and cabbage, as in the similar and related recipes, or just corned beef without vegetables, here are a few quick, easy and tasty ways to use the leftovers.
- Soup - Use the leftover vegetables, broth, and some of the corned beef. Add some chicken broth if needed, frozen mixed vegetables, garlic and seasonings. If you made and have leftover horseradish sauce, as in the similar and related recipes, top each serving with a dollop. Serve with crusty bread.

- Corned Beef Skillet Dinner - This is an idea from Anna Colson. Chop an onion and fry with butter until soft. Add chopped corn beef and cabbage and other boiled vegetables. Add extra salt if needed and black pepper for a quick and easy skillet dinner.
