This grilled chicken breast recipe with southwestern seasonings is delicious as is, or added to the vegetable fajitas in the similar and related recipes, allowing one breast for two or three fajitas. The recipe can be made in any amount needed.
Place the chicken in a shallow bowl. Combine the remaining ingredients in a small bowl and pour over the chicken, turning the breasts to coat both sides. Let set for 15 to 30 minutes.
Heat a grill to high heat. Grill the breasts until just cooked through and the juices run clear, turning to brown both sides, about 7 minutes per side, depending on thickness. Remove from grill, tent with foil, and let rest 5 minutes before serving.
Notes: The chicken can be cooked in a grill pan, skillet or under a hot broiler. If using in fajitas, carve into thin slices about the same size as the vegetables.
