This recipe for boneless, skinless chicken breasts is a quick, easy, healthy and delicious main dish for a busy weeknight or casual entertaining. Make it outdoors or indoors using a grill pan. If grilling is not an option, the chicken can be broiled or cooked in a skillet.
Place chicken breasts in shallow dish. Place the remaining ingredients in a small bowl and combine well with fork or small whisk. Pour marinade over chicken, being certain to get some on both sides of breasts. Let stand at room temperature for 15 to 30 minutes. Meanwhile, heat grill. Brush the cooking grate with oil. Grill the breasts until cooked through and the juices run clear, turning once to brown, about 7 minutes per side depending on thickness. Remove from grill, tent with foil and let rest 5 minutes. Serve immediately.
