Lamb Pita Sandwiches with Yogurt Sauce

This recipe is a quick and easy way to turn leftover roasted lamb into a different main dish for another meal. It is a delicious sandwich that was inspired by a Greek Gyro. It is also very good with leftover beef roast.

Ingredients

  • Olive oil
  • Green and/or red bell peppers, cut into thin strips
  • Sliced onions
  • Leftover roasted lamb, cut into thin slices (see the similar and related recipes)
  • Dried oregano
  • Salt and pepper to taste
  • Plain Greek yogurt (can use reduced or nonfat)
  • Minced garlic
  • Lemon juice
  • Pita pockets

Heat a nonstick skillet coated lightly with olive oil over medium-high heat. Sauté the peppers and onions until tender. Add the lamb, oregano, salt and pepper and cook until the meat is hot.

Meanwhile, combine the yogurt with a little garlic, lemon juice and salt. Taste and adjust flavor as needed. Cut the pita pockets in half. Stuff each half with meat and vegetables, then dollop with the yogurt sauce. Serve immediately.
