Chocolate Swirl Cheesecake

Laura writes: "This is the most delicious and easiest to make cheesecake I have ever tried, and I'm quite a cheesecake lover. This recipe comes from my mother and is always included in our family's special events."

Ingredients

   Crust
  • 1-1/4 cups crumbs (can use graham crackers, chocolate wafers, or other as desired)
  • 2 tablespoons granulated sugar, less if crumbs are sweet
  • 2 ounces (1/2 stick) butter, melted
   Cake
  • 6 ounces bittersweet chocolate
  • 1/4 cup liquor (Mom uses Amaretto. I use rum.)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 pound cream cheese
  • 1 tablespoon vanilla
  • 4 extra-large eggs

For the crust, blend crumbs with other ingredients and press into the bottom of a greased, springform pan and refrigerate.

For the cake, preheat oven to 325° F. Melt chocolate and liquor for about 1 minute on high in microwave, depending on wattage; stir until smooth. Put next five ingredients into a blender and blend on the slowest speed. Set aside 10 ounces of this mixture. Add chocolate liquor mixture to the cheese in the blender and mix.

Put chocolate/cheese mixture into the pan with the crust. Then put vanilla mixture in, in four even blobs. Use a knife to swirl the two together. Bake for 50 minutes. Cool completely, then refrigerate.
