Easy Pasta Fazool (Italian Pasta and Bean Soup)

Erly writes: "My late mother-in-law, Vincenza Albanese, was from Sicily. You said your recipe for 'Pasta Fazool' (see the Pasta e Fagioli in the similar and related recipes) was time consuming? Hers is the exact opposite! The first time my husband, of 41 years now, made this for us, I said, "MY kids will NEVER eat that!" Leave it to kids to make a liar out of you. It's still a cold weather favorite for all of us."

Ingredients

  • 1 pound baby lima beans (can use other bean, if preferred)
  • 1 large onion, chopped
  • 2 cloves garlic, chopped (can use 1/2 teaspoon garlic powder)
  • One can (4 ounces) tomato paste
  • Ditalini pasta (also known as 'Salad Pasta')

Cook lima beans until half done. Add onion and tomato paste and continue cooking until beans are done. Boil pasta on the side; drain and add to soup as desired.
