Irish Soda Bread

Makes two round loaves

Cindy writes: "This bread is terrific! The best thing about it is that the bread is so moist and full of flavor that you don't need raisins in it. My family loves the bread and it is requested for all special occasions, not just St. Patrick's Day."

Ingredients

  • 4 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup butter
  • 1 cup raisins (optional)
  • 1-1/3 cups buttermilk

Preheat oven to 350° F. Sift flour, baking soda, salt and sugar. Cut butter into dry mixture until it resembles coarse cornmeal. At this time, you can stir in the raisins, or leave them out. Add buttermilk gradually; mix until blended. Turn dough out on a lightly floured bread board and knead for 2 minutes until smooth. Divide dough in half. Shape each into a ball. Flatten slightly with hand. Bake on an ungreased sheet for about 1 hour or until browned. Enjoy!
