Kissel Pimento Cheese

Ingredients

  • 1 pound extra sharp cheddar cheese, preferably New York State
  • 4 ounces roasted pimentos or peppers
  • Mayonnaise (see notes below)

Grind or shred cheese and pimentos and all the liquid. Mix and add enough mayonnaise to make smooth (see notes below). To make a cheese ball, just refrigerate, roll into a ball and roll in chopped walnuts. Your guests will go nuts over it.

Notes: A small amount of mayonnaise makes it a cracker spread. More mayonnaise makes it easier to spread on soft breads. I usually make two batches as it is a mess in the processor and might as well make a lot. It keeps well in the refrigerator and makes the best grilled cheese sandwiches.
