Amy writes: "I have a good leftover meal with variations to make from an original meal of cubed turkey breast and rice, canned mushrooms with liquids, and chopped onion."
Broccoli-Rice-Turkey Casserole: Add a can of broccoli-cheese soup to the leftover turkey and rice. Stir soup in thoroughly and either bake or microwave. I prefer baking to get it a bit crisp on top, after first stirring to heat through in a pan on the stove. Then, I fix cornbread and a green vegetable like cabbage, greens or peas. For variety, add fresh-cooked or frozen broccoli to the casserole.
Variations: If you like any other canned cheese soups, such as fiesta nacho, chowder or golden, substitute appropriate complementary ingredients. We plan to try a Mexican-themed leftover meal next time with the nacho cheese soup. Perhaps some tortillas, quesadillas, or nachos. Raw sliced vegetables with salsa, sour cream dip, or cream cheese would work, too.
Can you tell I get so carried away that I make leftovers from my leftovers? Anyhow, these meals are tasty, filling, nutritious and quick. Enjoy one Indian summer evening.
