Posada Sandwiches

Ingredients

  • 8 ounces cream cheese
  • 2 handfuls of spinach washed, thoroughly drained, stems removed
  • Salt and pepper to taste
  • Pinch of garlic powder, or to taste
  • Sliced hot turkey (can use roast beef)
  • 1 (12 inches) French baguette
   Optional toppings
  • Lettuce
  • Arugula
  • Sliced tomatoes
  • Sliced cheese

Mix spinach and cream cheese well, adding salt, pepper and garlic powder to taste.

Slice open the bread horizontally and spread thickly with cream cheese mixture. Layer with piping hot turkey or beef. Add lettuce, arugula, tomatoes and choice of cheese (I prefer baby Swiss). Close sandwich and slice into serving size pieces. Enjoy!

Note: My husband loves it with a hot au jus (dipped in meat broth).
