Prune Oatmeal Bars

Joy writes: "This is my favorite dessert. It comes courtesy of the California Prune Board."

Ingredients

  • 1 cup chopped prunes
  • 1/4 cup granulated sugar
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1-1/2 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2/3 cup shortening (can use part butter or margarine)

Combine prunes, sugar, lemon rind, and lemon juice in a small pot. Cook, stirring, over low heat until thick. Cool.

Preheat oven to 350° F. Blend remaining ingredients until crumbly. Into bottom of greased 8-inch square pan, pack firmly half the oat mixture. Spread with prunes and then top with remaining oat mixture. Pat lightly into pan. Bake for 35 minutes.
