Rice Bread

Makes one 1-1/2 pound loaf

Heather writes: "I wanted to comment on your uses for leftovers section. Chinese food white rice in particular. I once made a rice bread in my bread machine that used leftover rice from Chinese food. It was a nice textured bread and the rice broke down nicely so you didn't end up with wads of hard rice stuck together in your bread. Yuck! My hubby liked that bread a lot."

Ingredients

  • 2-1/4 teaspoons dry yeast
  • 3 cups bread flour
  • 1-1/2 teaspoons salt
  • 1 tablespoon granulated sugar
  • 2 tablespoons nonfat dry milk powder
  • 1 tablespoon butter
  • 3/4 cup cooked rice
  • 3/4 cup water
  • 1 large egg
  • 1 teaspoon lemon juice

Measure all ingredients in bread machine pan according to manufacturer's directions. Select basic or white bread cycle for a 1-1/2 pound loaf and do not use timer. If you find that there is not enough liquid, add 1/2 teaspoon of water at a time until the dough looks like the right consistency. Good luck and enjoy.
