Mary writes: "I had to share my recipe with you. This past weekend was the beginning of the regular football season. Our normal gang got together for a noon game. Dinner was being served after the game at 3:00 or 3:30, so I decided I needed to make some kind of breakfast casserole for the group. I looked through quite a few cookbooks and couldn't come up with anything, so I improvised with my own recipe. Everyone loved it!"
Preheat oven to 375° F. Grate the potatoes; place in a microwave safe dish with 1 tablespoon of water and cook for 5 minutes (time may vary depending on the microwave wattage).
While cooking potatoes, fry bacon in a large skillet. When bacon is done, set aside and reserve one-half of the bacon grease. Add potatoes, onion and green pepper to reserved grease. Cook until potatoes are lightly browned. Place potato mixture in a lightly greased casserole dish. Place cheese on top of potatoes. Crumble bacon and place on top cheese layer. In a bowl scramble the eggs and add stewed tomatoes, mix well. Place this mixture atop bacon layer. Bake for 20 minutes.
