Ingredients

  • 2 pounds round steak, cut into serving sizes
  • Pinch of salt to taste
  • 1/2 teaspoon pepper
  • 1 teaspoon minced garlic, more to taste
  • 1/2 cup apple cider vinegar
  • 1 tablespoon canola or other cooking oil
  • 3/4 cup catsup (ketchup)
  • 1/4 cup water
  • 1 cup chopped green pepper
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • Flour and water paste to thicken sauce
  • Browning sauce, such as Gravy Master (optional)

Combine salt, pepper and garlic. Rub thoroughly into meat on both sides. Place meat in bowl, pour vinegar over meat, marinate at least 4 hours or overnight.

Preheat oven to 325° F. Drain meat well; discard marinade. Brown meat in oil in a Dutch oven. Combine catsup and remaining ingredients, except the flour and water paste, and spoon over meat. Cover and bake for 2-1/2 or 3 hours. If steak becomes dry, add water to keep moist. Thicken sauce to gravy with flour and water paste. If desired, add browning sauce to give it a nice warm color. Serve with noodles or mashed potatoes and your favorite vegetable.
