I created this soup recipe when I was a teenager. It is a quick, easy, tasty and kid-friendly main dish. If preferred, you can substitute any fully-cooked sausage, but this is fun for those who love hot dogs.
In large saucepan over medium-high heat, melt the butter. Add the onions, carrots and celery; cook until slightly golden. Add the flour and cook 5 minutes more, stirring often. Add potatoes. Gradually add the water, stirring constantly to incorporate the flour. Bring to boil, cover and simmer over low heat for 20 minutes or until the potatoes are tender.
Add hot dogs, corn, salt and pepper and continue to cook for 5 minutes or until hot dogs are hot. Add the milk and parsley and heat again, but do not boil. Serve immediately.
