Father's Day is a time to thank our fathers for all the special things they do. My father's favorite way to celebrate his day was with good food. In his honor, I created a menu that includes some of his favorites. The first course, steamed clams with browned butter, was a favorite appetizer that Dad and I shared often at a small, neighborhood bar and grill called Hemerley's. The main dish I chose was another of Dad's favorites, grilled rib eye steak. Even on Father's Day, he insisted on and was happy to do the grilling while Mom, with a little help from my brother and me, prepared the remainder of the dinner indoors. The side dishes I chose are grilled potatoes, roasted squash and a classic caesar salad, my father's favorite salad.
I complete this Father's Day meal with one of my father's favorite desserts, my mother's berry crumb pie and serve it with store-bought or homemade vanilla ice cream. Father's Day Dinner MenuSteamed Clams with Browned Butter served with Garlic Bread or Toast Grilled Rib Eye Steaks with Garlic and Rosemary Grilled Potato and Onion Packets Roasted Yellow Squash Classic Caesar Salad Mom's Berry Crumb Pie (made with fresh blue or other seasonal berries) served with store-bought or Homemade Vanilla Ice Cream Preparation NotesIf making homemade ice cream, prepare it up to several weeks ahead and store in a covered container in the freezer. The pie crust can be made several weeks ahead, covered and frozen, or several days ahead and refrigerated, as indicated in the recipe. (Alternately, you can use your favorite store-bought unbaked pie crust.) In the morning, make the pie and keep at room temperature. Rinse the lettuce (unless pre-washed) and refrigerate. Prepare the croutons for the salad, cool, place in an air-tight container and keep at room temperature. Rinse the squash. The steaks can be marinated early and refrigerated as noted in the recipe. About two hours before serving, prepare the potato packets. Scrub the clams and refrigerate. Heat the grill and oven and cook the potatoes and squash as indicated in the recipes. Make the dressing for the salad. Meanwhile, cook the clams and brown the butter. Serve with the garlic toast before the main meal. All that remains is to grill the steaks and dress the salad.
