Recipes for Leftover Cooked Greens

I love greens and cook them often. For these examples of how to use the leftovers, you can utilize any type of greens you have on hand, whether steamed, sautéed or roasted. See the similar and related recipes for greens made from scratch.


  • Greens Soup - Chop some onion and carrot. Sauté in a soup pot with a little olive oil. Add some minced garlic. Add water and/or broth. Simmer about 20 minutes, then add leftover cooked greens, small pasta, such as ditalini, and some frozen corn. Simmer until pasta is cooked. This makes a delicious and healthy soup. The more greens, the better.

  • Pasta with Greens - Add some garlic and use as a sauce with cooked pasta. You now have a delicious pasta dish.

  • Poached Eggs on Greens - Heat the greens in a skillet and top with eggs. Cover and steam until the eggs are the desired doneness.
