Recipe for Leftover Gazpacho


Pasta with Gazpacho Sauce

Could you have guessed? Leftover Gazpacho (Chilled Tomato and Vegetable Soup) is like a tomato sauce and is a perfect condiment for pasta. Bring the gazpacho to room temperature. Add some garlic, herbs and, if needed, more tomatoes, depending on the number of servings required and amount of pasta. Add the gazpacho directly to the hot pasta, which will warm the sauce when you stir to combine. It makes a quick, easy, light and delicious main dish. Use whole wheat pasta for an even healthier presentation.

Notes: This method will work equally well with any tomato-based soup or vegetable dish that you might have leftover. However, if it is a cream soup, it should be reheated before adding to the pasta.
