This Italian-inspired ravioli recipe is a quick, easy and delicious main dish for a family dinner, special occasion or casual entertaining. For a similar version with homemade cheese ravioli, see the similar and related recipes.
Place the oil and garlic in a large skillet or sauté pan over medium-high heat. When the garlic begins to sizzle, add the spinach, a little water, salt and pepper. Cover and cook until the spinach is tender and done, about 10 minutes, adding a little water as needed if it dries out. Remove the lid and increase heat to high. Add the wine and boil for one minute. Add the cream, nutmeg, additional salt and pepper. Continue to cook until the cream reduces by about half, about 5 minutes.
Meanwhile, cook the ravioli according to package directions. Drain, reserving a little of the cooking water. Add the ravioli to the sauce and toss over medium heat for about one minute, adding the reserved pasta water as needed to loosen the sauce. Serve immediately, passing the grated cheese separately.
