Caper Butter for Grilled Fish

Ingredients

  • Juice of 1 lemon
  • 4 tablespoons whipped butter
  • 2 ounces capers
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Lean fish filets

Heat grill. Combine butter, lemon juice, capers and set aside. Rub fish with oil; season with salt and pepper. Grill fish until done, 3 to 5 minutes on each side. Serve with butter/caper mixture.

Notes: The grilled fish can be basted with the mixture. It can also be used as a dip for fried fish. For those not familiar with capers, they are quite salty because they are cured in a brine. That is why they are rinsed before using and additional salt might not be needed. The smaller varieties have more flavor. Chopping the capers in a food processor might add flavor.
