Broiled Salmon with Orange-Dill Sauce

Alex writes: "The original recipe recommended serving this dish with asparagus or sautéed baby spinach."

Ingredients

  • 4 salmon fillets, about 4 ounces each
  • 1/2 cup white wine
  • 1/2 cup orange juice
  • 1/2 cup water
   Orange-Dill Sauce
  • 1 cup nonfat plain yogurt (can substitute sour cream)
  • 1/2 cup orange juice
  • 1/2 cup green onions, finely chopped
  • 2 teaspoons fresh dill
  • 1 dash hot sauce, such as Tabasco
  • 1 dash lemon juice

Marinade salmon fillets for 30 minutes in mixture of wine, orange juice and water. Broil salmon for 3 to 4 minutes on each side.

Mix all the sauce ingredients together and spoon over cooked salmon fillets.
