In a large bowl or shallow dish, combine the garlic, capers, lemon juice, olive oil and pepper. Place fish fillets in the container, making sure marinade covers all sides. Cover and refrigerate for about 1 hour.
Place on hot grill and cook until fish is done, approximately 10 minutes, depending on thickness of fillets.
Variation: Baste fish lightly with tomato paste when finished.
Notes: For those not familiar with capers, they are quite salty because they are cured in a brine. That is why they are rinsed before using and no additional salt is needed. The smaller varieties usually have more flavor. Chopping the capers in a food processor adds more flavor.
