Sauté onions in butter until translucent. Stir in flour until mixture is smooth. Add chicken broth until thickened. Add lobster and cook for 20 minutes. Blend in sherry, cream, tomato paste, salt and pepper and cook 5 minutes longer.
Notes: You can substitute one 14-ounce box langostinos for the lobster, which is less expensive and just as good.
