Rhubarb Cake

Makes one 13x9-inch cake

Ingredients

   Topping
  • 1/3 cup granulated sugar
  • 1/3 cup chopped nuts
  • 1 teaspoon cinnamon
   Cake
  • 1/2 cup oil
  • 1-1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon baking soda in 1 cup sour or buttermilk
  • 2 cups all-purpose flour
  • 4 cups fresh rhubarb cut in 1 inch pieces

Mix topping ingredients together and set aside.

Preheat oven to 350° F. Place oil in mixer bowl. Add sugar and beat well. Add salt and beat in egg. Add soda and milk mixture and the flour alternately, beginning and ending with flour. Stir in rhubarb. Pour into a 13x9x2-inch pan. Sprinkle topping over top. Bake about 45 minutes or until done.
