Recipes for Leftover Steak
When I make steaks, whether on the grill, under the broiler or in a skillet, I love to use thick cuts. The problem with that is the portions are usually larger than needed. But there is nothing better than leftover steak for a quick and easy lunch or dinner the next day. Here are a few ideas for using the leftovers. - Sandwiches - Grilled Steak Sandwiches with Peppers and Onions is a quick and easy recipe in which the peppers and onions are roasted or sautéed, with the leftover beef added during the last few minutes to reheat. Everything is placed in crusty rolls and topped with provolone or other cheese of choice which is melted under the broiler. Yummy! Another delicious sandwich made with leftover steak is my Grilled Steak Sandwiches with Caramelized Onions and Blue Cheese-Horseradish Sauce. However, do not hesitate to make the steak from scratch. It is well worth the little extra effort.
- Salad - Make a mixed green salad using your favorite salad dressing, reserving some of the dressing for later. Bring the steak to room temperature and slice thinly. Place on top of the salad and drizzle with some of the reserved dressing. This makes a great steak salad for lunch or a light dinner.
