Tomato-Based Barbecue Sauce

Makes about 1-1/2 cups

This is one of my favorite tomato-based barbecue sauces. It can be used for chicken, beef or pork. It can be made ahead and in any amount needed. See the similar and related recipes for several different and equally delicious barbecue sauces.

Ingredients

  • 2 tablespoons ham fat, bacon grease, vegetable oil or butter
  • 1 cup chopped onions
  • 3 tablespoons dark brown sugar
  • 2 teaspoons dry mustard
  • 3 tablespoons Worcestershire sauce
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • Salt and pepper to taste

Heat the fat in a small saucepan over medium heat. Add the onions and sauté until lightly browned. Add remaining ingredients. Bring to a boil, reduce heat and simmer, uncovered, for approximately 5 minutes. Taste for seasoning. Cool before using.

Notes: Sauce can be refrigerated for up to five days or frozen for one year.
