Tomato-Based Barbecue Sauce

Makes 1-1/2 cups sauce

This is one of my favorite tomato-based barbecue sauces. It can be used for chicken, beef or pork. It can be made ahead and in any amount needed. See the Eastern North Carolina Vinegar-Based Barbecue Sauce in the similar and related recipes for something very different and equally delicious.

Ingredients

Heat the fat in a small saucepan over medium heat. Add the onions and sauté until lightly browned. Add remaining ingredients. Bring to a boil, reduce heat and simmer, uncovered, for approximately 5 minutes. Taste for seasoning. Cool before using. (Sauce can be refrigerated for up to one week or frozen for one year.)
