Flexibility Soup from Leftovers

Joan writes: "This is based on a recipe I tore out from one of those magazine-type cookbooks you find in checkout lanes. It's kind of the ultimate 'leftovers' recipe."

Ingredients

  • 4 cups water
  • 2 tablespoons granulated beef bouillon
  • 1/2 teaspoon thyme
  • 1/4 teaspoon leaf basil
  • 1 clove garlic, minced
  • 3 to 4 cups assorted bite-sized fresh or canned vegetables, leftover cooked plain vegetables, meat, and rice or macaroni (whatever you have on hand)
  • Salt and pepper to taste

In medium saucepan, combine all ingredients; bring to a boil. Simmer, uncovered, 20 to 30 minutes, until fresh vegetables are tender.
