Roasted or Baked New Potatoes

Ingredients

  • New potatoes
  • Extra virgin olive oil
  • Kosher salt
  • Thyme or crushed rosemary
  • Freshly ground black pepper

Take new potatoes, as many as you need. Wash and dry them. Place in bowl. Sprinkle olive oil on top, then salt, thyme or crushed rosemary, and a little fresh black pepper. Gently fold together so potatoes are all touched by the oil mixture. Place in a covered pot in a preheated 400° F oven and bake until soft. Or, if you like them crisp, place on a baking sheet in a preheated 425° F oven and roast until the tip of knife easily enters potato.
