Slow Cooker Pork Chops

Serves 2 to 4

Irish writes: "I usually serve this with a quinoa and brown rice side and green salad with a red wine vinaigrette for the sharpness in contrast to the sweet chops."

Ingredients

  • 2 to 4 center-cut pork chops, 3/4 to 1-inch thick each, well trimmed of fat
  • Salt and pepper to taste
  • Canola oil
  • Cooking oil spray
  • Celery and/or peeled onions
  • Cola
  • Ketchup

Season chops with salt and pepper. Sear on both sides in canola oil. Spray the slow cooker with cooking oil spray.

Place the celery and/or onions on the slow cooker bottom to form a rack for chops to rest upon. Place the seared chops on the vegetables. Cover chops with a half and half mixture of cola and ketchup. Cook on Low for 5 to 6 hours or High for 3 to 4 hours until pork is tender. Serve with a little of the gravy mixture on top of the tender chops.
