Recipes for Leftover Fish and Seafood
To be honest, I seldom have seafood or fish leftover. However, there are times when it happens and I have listed some ideas for using it. Most any fish or seafood that you have leftover can be used in the suggested leftovers. See the similar and related recipes for some fresh seafood preparations.
- Seafood Salad - Almost any type of fish or seafood can be used in a salad. Add some mayonnaise, lemon juice, parsley, perhaps dill or basil and you have another dish. Seafood has a delicate flavor and texture which you do not want to mask, so just a little of the extra ingredients go a long way. Serve as is or in seafood salad sandwiches.
- Salmon Cakes - Leftover salmon makes easy and delicious Salmon Cakes, a slightly different version of the usual patties made with canned salmon.
- Sandwiches - Another use for leftover salmon is in sandwiches, such as Salmon Salad Sandwiches or Salmon Sandwiches with Pickled Cucumbers.
- Lobster Cakes - Leftover lobster is a rare treat. It makes a delicious salad, as described above or, like salmon, can be used to make Lobster Cakes with Creamy Roasted Red Pepper Sauce, served as an elegant appetizer or main dish.
