Apple Cake

Makes one 10-inch tube cake

Sue writes: "The best apple cake anywhere. It can be eaten for breakfast, with afternoon tea or as a dessert warmed with ice cream or whipped cream. It can be frozen well, too. I always have one on hand. It was passed down from my Dad. Very rich so a cake goes a long way."

Ingredients

  • 1-1/2 cups oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 4 cups of peeled and thickly sliced Granny Smith apples (use Granny Smith as they stay firm)
  • 1 cup chopped walnuts

Preheat oven to 350° F. Mix oil and sugar together with electric mixer on medium while you assemble the rest of the ingredients.

Meanwhile, sift together, flour, salt, baking soda, and cinnamon and set aside. Add the 3 eggs to sugar mixture and mix well for 1 minute longer. Add dry ingredients and then vanilla, mixing well. Turn off mixer and stir in apples and nuts. Mixture will be thick. Grease well a 10-inch tube pan. Pour mixture into pan and bake 1 hour and 15 minutes. Check for doneness after one hour as time may vary with ovens. Enjoy.
