Beef Stuffed Pasta Shells

Theresa writes: "Get ready to enjoy my favorite recipe! Don't dish out to much...it is rich!"

Ingredients

  • 1 pound ground beef
  • 2 jars spaghetti sauce
  • Herbs and spices to taste
  • 2 eggs
  • 2-1/2 pounds mozzarella cheese, grated, divided
  • 24 ounces cottage cheese
  • 1 box (12 ounces) jumbo shells

Preheat oven to 450° F. Brown the beef, then add to it the spaghetti sauce with desired spices. Mix together the eggs, only 1 pound of the mozzarella cheese, and all of the cottage cheese. Bring 6 cups of water to boil, then pour in the box of jumbo shells. Cook until desired tenderness.

In a baking pan, spread a very thin layer of the sauce. Stuff the shells with the cottage cheese mix. Place one layer of stuffed shells in pan. Cover with sauce, then sprinkle with some of the remaining mozzarella cheese. Repeat this until the pan is full, making sure the mozzarella cheese is the top layer. You may need more than one pan. Bake, covered, for 45 minutes. Then uncover and bake for 15 to 20 minutes more.
