Creamy Potato Salad with Bacon

Terrie writes: "The best potato salad I ever had was made by an elderly friend of mine 10 years ago. She gave me the recipe and I'll try my best to give correct measurements."

Ingredients

  • 1/2 pound sliced bacon, fried and crumbled, fat reserved for dressing
  • 2 pounds potatoes
  • 2 cups mayonnaise
  • 1/2 teaspoon prepared salad mustard
  • 1 teaspoon granulated sugar
  • 1/2 cup milk
  • 3 hard-boiled eggs, yolks and whites separated
  • Salt and pepper to taste
  • 1 medium onion, diced
  • 1/2 cup chopped celery

Boil the potatoes with skins on for 30 to 45 minutes or until fork tender, depending on size. Peel and dice into 1/2-inch chunks. Mix together the mayonnaise, mustard, sugar, milk, bacon grease, egg yolks, and salt and pepper. Combine onions, potatoes, celery, egg whites and crumbled bacon in large bowl. Mix in dressing...enjoy!
