Chocolate Dipped Peanut Butter Balls

Ingredients

   Peanut Butter Filling
  • 1 cup smooth peanut butter
  • 1 cup confectioners' (powdered) sugar
  • 2 large egg yolks (see notes below)
  • 1 teaspoon vanilla
   Chocolate Coating
  • 12 ounces chocolate chips
  • 1/8-pound (2 ounces) paraffin

For the filling, combine and mix peanut butter, confectioners' sugar, egg yolks and vanilla. Roll into 1-inch balls and place on cookie sheet; chill in refrigerator until cold.

For the candy coating, melt the chocolate chips and paraffin in a double boiler over hot water. Dip chilled peanut butter balls into chocolate mixture and place on waxed paper to set.

Notes: If you are concerned about consuming raw egg yolks, use pasteurized eggs or egg product.
